Keep it going! You're doing awesome! Here's another 3 recipes to inspire you.
1) Fruity Smoothie
Ingredients:
1 orange
1 banana
1 green apple
1 cup of frozen mango
2 cups of water + 1/2 cup of ice
2) Tofu Seaweed Soup
Ingredients:
3 cups of cubed yellow potatoes
1/2 of a bulb of garlic (peel removed)
1/8 cup of Ottogi dried Kelp
Enough water to cover the potatoes when cooking
Salt to taste
1/2 a block of tofu cut into cubes
1/2 cup of mushrooms (any version will do)
Directions:
Boil potatoes, kelp and garlic until potatoes are soft and can break apart with a fork.
Then remove the kelp and set aside. While that is boiling, prepare your tofu and
mushroom.
If you have time, Airfry tofu and mushroom separately.
If you don't have time, then you can combine it like you see in the video at 400 for 15
min.
Once the potatoes are done, blend them until its nice and creamy. Using the same pot,
pour the puree mix into the pot.
This is OPTIONAL, but I like to add the kelp back into the mix.
I just use kitchen scissors to cut it up into bite size portions.
Lastly, add your airfryed tofu and mushrooms.
I find just adding some salt in my own bowl prevents me from having too much salt in the
dish. But it is up to you.
3) Fruity Bean Mix
Ingredients:
1 cup of INSTAPOT cooked blackbeans (rinsed and drained)
1/8 cup of chopped pineapple
1/8 cup of chopped mangoes
1/2 tbs of paprika, garlic & onion powder
1/4 tsp of ground Himalayan salt
Because I wanted to add some more fiber, I topped it off with two mandarin oranges and guacamole
You can spruce this up even more by adding cilantro or cucumbers. The sky's the limit. You can really get creative with adding tons of fruit to this, but just don't go crazy, cause simple is more.
