Make about 2-3 servings
NOTE: Do not get Jackfruit in brine, it will dramatically change the flavor.
1 can of Jackfruit in water (drain/squeeze out the water from the jackfruit/CHOP)
2 TBS of olive oil
1/2 a lemon juiced
1/2 cup of basmati rice (cooked)
1/4 cup of minced red onions
1/2 TBS of green onions ( or chives)
Pinch of salt
Pinch of black pepper
1 TBS of Cashew Mayonnaise
1-2 TBS of olive oil
1) In a wok, add some oil and jackfruit. Cook until the jackfruit is slightly grilled and brown.
2) Next, add half the lemon juice, salt and pepper.
3) Finally, place everything in a bowl and add the minced onions, the rest of the lemon juice and cashew mayo. Garnish with green onions or chives.
Pair it with basmati rice or brown rice with a side of lemon soy-sauce. ENJOY!
