Creamy Bamboo &
Tofu Stir Fry

Recipe below:
Ingredients
3-5 servings

1 pack of super firm tofu
3 cubes of cilantro
1 onion diced
1 TBS of minced garlic
1 TBS of minced ginger
1 can of coconut milk
1/2 tsp of salt
1 can of julienned bamboo shoots (drained and rinsed)
1 TBS of onion powder
1/2 lemon juiced
1 TBS of vegan gochujang (optional)
2 cups of chopped kale (optional)
How to:
1) Pop the tofu in the airfryer for 15 minutes at 390-400 degrees
2) Meanwhile, in a wok add 1/2 the water with garlic, onions, and ginger
3) Sauté for about 1 min, then add the bamboo shoots and coconut milk, mix it up and sauté for another minute

4) Add tofu, salt, lemon juice and onion powder. Mix and cook for 1 min.​

5) When everything is slightly boiling add the gochujang and mix
​
6) Add greens last so it wilts and absorbs the flavors
​
7) Serve on a hot bed of rice or noodles
​
