Amaranth Breakfast

Ingredients

NOTE: Fresh homemade coconut milk or almond milk make this breakfast amazing!

* The ratio is 1 : 3

   1 cup of amaranth to 3 cups of water

    (   )  = substitutes

​

This recipe serves 1 person

​

1/3 cup of amaranth

1/8 cup of dried raisin (or cranberry)

1 cup of almond milk (coconut milk)

1 cup of water

1 tbs cinnamon (optional)

​

Topping options:

     Hemp seed

     Shredded Coconut

     Cacao nibs

     Goji berries

      Dried fruit of any kind

      Fresh fruit of any kind

      Granola

      Nuts of any kind

      Seeds of any kind

How to:

Amaranth:

​

1) In a small pot, add amaranth and water. Cook it on medium-low heat for about 15 min. Keep an eye on it and add water just in case. Each stove is different so cooking times may vary slightly.

2) After 10 min. add the raisins and cinnamon. Cook it till the raisins are soft. 

​

3) Next, prepare your bowl. Add the amaranth. Then top it with all the toppings you want. And add the almond milk. 

​

There you have it a nutrient dense breakfast. Bon Appetite!
